I was going to to title this “File It In Meh” but its is so truly bad that it’s going to a place of distinction, the worst thing I may have ever made, forget the frozen file, it’s just bad. And my poor houseguests, the rule here is you need to taste at least a bite. The good news is that my friends are still staying the week, but I’ve had to make some promises about future flavors…..
So we had these beautiful sweet snap peas. They did not make it into the dinner line up tonight but they were destined to go bad- and now I’ve made them go to hell.
Sweet pea ice cream and sweet pea pops both look good. I did not make them. Friends say, and really I question them, say flavor good but texture off. I demur. Anyway, here it is:
Bad Sweet Pea Ice Cream-ish
2 cups snap peas chopped
1/2 cup water
1 cup heavy cream
1/2 cup simple syrup (1:1 ratio)
3 tablespoons lemon juice (1/2 lemon)
dash salt
3 egg yolks
1/2 cup mint leaves
- Chop peas and put in sauce pan with water. Cover, heat, soften, 10 minutes.
- Add cream,sugar, mint. Steep 10 minutes. Off heat. Immersion blend to somewhat puree, turns out you should probably do more. Add salt, lemon juice. Taste and adjust.
- Add egg yolks and gently simmer to light chunky custard,
- Container saran, chill, churn, toss after you’ve had one bite.
Oh well. Really, does this look appetizing? BTW, I did find one recipe, but I’m embarrassed to post it because, I might get sued for something if I did. My friend says I’m fearless. I’ll take that, but he really screwed up a brisket last weekend…
On a happy note, the herb ice cream was much better than I expected and here’s a shot of Mo, as well, because he’s delicious.
