Watermelon Tomato Honey Chili Pops
we have great watermelon, great tomatoes, and I saw a recipe for watermelon tomato gazpacho that looked interesting. Hmmm, what would a normal person do? Surf to the next page on their internet connection. Me? I made popsicles. But I also wanted to add a twist – mint, basil, and lime all crossed my mind but then I spied the jar of chili infused honey and voila.
1 medium very ripe tomato
2 cups watermelon cubes
2 tablespoons chili infused honey
- Peel and core the tomatoes, remove the seeds, cut of the tomato into 1-inch dice and put into a bowl. Note, I tried to strain the water from the tomato seeds. It was a mistake. The water ended up being too watery, I just needed the pulp.
- Add the watermelon to the bowl.
- Blend using an immersion blender. Add the honey and blend some more.
- Pour into popsicle molds (or ice cube trays) and freeze.
Can you spot the mistake? The water separated from the pulp. It turns out that the water tastes like tomatoes, the rest tastes like watermelon, even thought there is plenty of tomato pulp in the mix. The mistake you can’t spot is that the honey has sweetened only the pulp. The tomato water tastes like a wanna be bloody Mary. I guess it’s a little like having 2 courses in one, but really, why do that?
I can’t say these are something I’d make again, but maybe, there is a tray of leftover popsicle juice freezing that could quickly become a slushy later this week…
