But today its summer fruit extravaganza pops and a batch of mystery ice cream that I’ll talk about tomorrow, the nieces and nephews are in town…
So, in addition to attempting 31 days of frozen foods and blog posts, we also have a 31 day rental in a much cooler climate than where I usually live. Friends and family cycle through and we get lots of visits without having to pack up and travel each time. We should have thought of this a lot sooner. But I digress, today we get to see our niece and her family, which technically makes them my nieces and nephew once removed? Great nieces and nephews? I don’t care about the semantics, I wanted to make something geared towards them. I did these pops and a creamy ice cream.
It turns out that I love pops. Who knew? The corn pop from the other day? I sprinkled it with Tajin Powder, an amazing chili, salt and dehydrated lime that we found in a taco bar in Houston, and it was transformed into something sweet, tart, spicy, refreshing. I think the summer fruit extravaganza pops are going to be equally good. Why are they called this? I had fruit, fresh fruit from the local stand. The stuff that was bursting with ripeness included strawberries, blueberries, white peaches, and nectarines. They all went in the pot.
Summer Fruit Extravaganza Pops
3 cups diced ripe fruit
1/2 cup sugar (plus more to taste)
Juice of 1/2 lemon (2 tablespoons) (or more to taste)
Mix all the ingredients in a bowl. Mash them using a fork, blender, or immersion blender as needed to make a chunky puree. Cover with saran and let sit on the counter in a cool kitchen or in the fridge for an hour to macerate. My mixture turned thick during this time. Give it a stir, taste, and adjust the sugar and lemon to your taste. My fruit was very sweet to start and the pops are for kids so my mixture borders on the sweet more than the tart. Fill your molds and freeze until firm.
You may want to allow these pops to soften a little before serving if you have frozen them for overnight. Also, I made pops and filled an ice tray. Are you thinking fruity sangria?
