Peach Melba Pops
Going into the City today to see Hello Dolly with my mom. I’m short on time and in a peach melba kinda mood, so I’m borrowing from the amazing Smitten Kitchen and making it even easier, which is hard to believe. I’m going to visit with my mom, I’m going to see a great show, but let’s face it – I’m going in large part to see the great Bette Midler.

Makes 4 pops
2 tablespoons sugar
2 tablespoons water
3/4 cup small dice peaches
1 cup soft ice cream – preferably Goat Cheese Raspberry Swirl
- Make a simple syrup by mixing sugar and water in a saucepan. Heat on medium until simmers and sugar dissolves. Add peaches and continue heating for 5 minutes until peaches soften. Turn off heat and allow to cool for 10 minutes. Puree them in a blender or with an immersion blender.
- Layer ice cream and peach puree in pop molds. Insert the stick and freeze.
